אמרי התם משום דלא אפשר היכי נבריך נבריך בורא פרי הזית פירא גופיה זית אקרי

The answer is : In this case [of oil, the benediction is unaltered] because none other is possible. What other benediction could he say? Should he use the formula "...Who createst the fruit of the olive," the olive itself is called "fruit"!
